Who doesn’t like to wake up to a stack of fluffy and delicious pancakes? “Not me”, said no one ever! Agree? Even those who do not like having breakfast otherwise can’t say no to pancakes! There’s something about homemade fluffy pancakes, I can never have enough of them! And if you share my sentiments then you are in for a treat today. These Whole Wheat Banana Caramel Pancakes are extremely easy to make, you hardly need any time to make these. And they taste so good, that it’s little hard to believe that they can be so easy to make!

My weekend breakfast more often than not revolves around pancakes and banana pancakes are a constant feature. And I would tell you why. It’s because I buy bananas every week and I can never finish the entire stack before they become ripe. And once they are ripe, neither me or hubby would eat them. And so what do you with them? Make pancakes of course! Ripe bananas work really well in pancakes, just like they do in muffins and cakes. The riper the banana, the stronger the banana flavor in your pancakes. I usually make simple whole wheat banana pancakes but this time around I gave them a little twist in form of this super delicious caramel glaze made with International Delight Simply Pure Caramel Creamer . Oh my god you guys, it made all the difference!

The caramel glaze is so simple to make. You only need powdered sugar and International Delight Simply Pure Caramel Creamer to make it. I always love to have delicious creamers on hand for my coffee and that’s why I stocked up on International Delight Simply Pure Creamer during my recent Walmart trip! It’s made with only 5 simple ingredients including real milk, cream and sugar and comes in 3 delicious flavors- Vanilla, Caramel and Hazelnut. I am little addicted to the caramel flavor and use it everyday in my coffee and so it was only natural for me to try it in a breakfast recipe!

The key to making a perfect stack of pancakes lies in not over-mixing the batter. Also I like to let the pancake batter sit for 10 minutes so that it absorbs all the liquids, especially when I am using whole wheat. The batter might look very thick once it has soaked in all the liquid and that is okay. Do not try to beat the heck out of it. If it appears too tough/thick, just add 1 tablespoon of milk. Fluffy, soft whole wheat banana pancakes drizzled with a caramel glaze, breakfast can’t get better than this!   Method In a large bowl whisk together flour, baking powder, cinnamon powder, nutmeg powder and salt. Set aside. To another large bowl, add mashed banana, eggs and vanilla extract. Mix till combined. To the same bowl now add sugar, melted butter and milk and whisk everything together till smooth.

Now make a well in the center of the dry ingredients and add in the wet ingredients. Stir in till just combined. Do not over-mix the batter. Let it sit for 10 minutes while you prepare the griddle. Heat a skillet or griddle on medium heat and spray it with a non-stick cooking spray. Once the skillet gets really hot, add around 1/3 cup of the batter.

Cook till the edges begin to dry and you see some bubble on top, around 1 minutes. Flip the pancake at this point and cook the other side for additional 2 minutes. Remove the pancake from the skillet. Spray the pan with non-stick spray for each new pancake that you make. Repeat till the batter is finished, you should get 5-6 pancakes. Place the pancakes on the serving plate. In a bowl take powdered sugar and cinnamon powder to it, if using. Add  International Delight Simply Pure Caramel Creamer to the sugar to form a smooth caramel glaze of pouring consistency.  Pour the glaze over your stack of pancakes and top with some fresh sliced bananas. Enjoy these Whole Wheat Caramel Pancakes with a cup of coffee!

  • If the batter appears too thick, you may add 1-2 tablespoons of extra milk but no more! I found the International Delight Simply Pure Coffee Creamer at my local Walmart in the dairy section!
