Aug 27, 2014, Updated Jan 02, 2018 My husband loves grilled cheese sandwich and that actually is the main reason why I got a grill pan. You can make sandwiches using the sandwich maker but the griller/grill pan makes them even more appetizing and not to forget the vegetables that taste amazing when you grill them. The grilled cheese sandwich that we get in India usually has onion, tomato and cucumber and coriander chutney is also an integral part of it. I wanted to have 3 layers in this sandwich but here in US the breads are so thick that I eventually decided on using only 2 breads. This is a very easy recipe, you don’t need to do anything other than chopping the vegetables so even if you are a beginner in the kitchen, you can give this sandwich a try. Also use any bread of your choice. We always eat whole wheat bread at home but the day I decided to make these sandwiches I was not able to find my 100% whole wheat bread and so used this white bread in place.
This easy to make sandwich is very filling and also a great way to include some vegetables in your diet! Method Cut the onion, tomato and cucumber into round slices. Set aside. Take the bead slices and apply butter (salted) on 1 of the slices and coriander chutney on the other slice. Place cheese slice over the bread which has coriander chutney on it. Sprinkle some salt and pepper on top. Place an onion on top of the cheese slice, then place the tomato and cucumber slices on top. Sprinkle some chaat masala and some more salt and pepper on top. Now sprinkle the shredded parmesan cheese on top. You can adjust the quantity of cheese to preference. Also sprinkle some chaat masala. Place the buttered slice on top [with the butter side facing up] to close the sandwich. Heat a grill pan on medium heat. Once hot, place the sandwich on the pan with the buttered side facing down. Apply some butter on the slice that’s facing upwards now. Once 1 side has cooked, flip the sandwich and cook the other side as well till the cheese has melted and the sandwich looks golden brown in color. Serve immediately with some ketchup or coriander chutney or even a side of fries -so yum!
- Use any cheese slice of your choice. I used Amul cheese slice just because husband loves it!
- Sprinkling of shredded parmesan cheese on top is optional but highly recommended.
- You can either make your own coriander chutney at home or get one from the Indian store.
- I used sweet onion for this sandwich, you can definitely use red onions in place.
- The reason I haven’t included the quantity of chutney and parmesan cheese in the recipe is because this depends on your taste and preference. Some people like me do not like a lot of cheese and then there are some who can never have enough of it. So add as much or as less as you please! Veggie Grilled Cheese Sandwich
