I don’t know about you, but when it’s hot outside I can’t help but crave super light, fresh, summery foods and this healthy rainbow summer salad is the perfect dish for sunny days and a great vegetarian BBQ option! What really makes this dish special is the tropical mango twist. I know there are still people out there who just can’t get behind fruit in a salad ( not including tomato’s of course!), however, the juicy-ness of the mango against the lime in the dressing and various savory elements really helps to pull this summer salad together.
How to make this healthy rainbow summer salad
The absolute best thing about this recipe is how super simple it is to pull together. Which is a definite bonus point when it comes to providing dishes for any get-togethers that can both impress yet remain incredibly simple to produce. For this particular salad, there is only one cooked element which is the corn. The rest of the prep is as simple and chopping up the remaining veggies and Mango and then tossing them in a salad bowl with the olive oil & lime dressing. Not to mention that there are only 10 ingredients (not including salt & pepper) and this takes around 20 minutes to make!
To Prepare the Corn
Okay, I know it’s easier to use corn from a can/pre-prepared corn and I suppose that It wouldn’t be the end of the world if you chose to do so. However, for me, I LOVE to use fresh produce. The fresher the better! So the full corn on the cob is the way to go! Simply remove the skin, cut the corn from the cob, and then either boil or microwave. I really think the freshness comes through! Alternatively, if you are serving this as a vegetarian BBQ recipe, then you can simply grill your corn as you usually would at a BBQ and chop it up into the pre-prepared salad! Or you can roast the corn in the oven.
Assemble the salad
To assemble the salad, you just need to chop the veggies and juice the lime. Then mix all ingredients, top with olive oil, salt & pepper, and cilantro. Enjoy!
