I am super excited to be finally unveiling the new look for Cook With Manali! This has been in the works for months. So what’s new? New logo: As you can see we have a brand new logo with orange and green. I absolutely love it! Improved recipe search: this isn’t totally working yet but this will allow you to search recipes using ingredients and much more. Recipe key: now you can easily find out whether a recipe is vegan, gluten-free or nut-free by looking at the recipe key. Look out for vegan, gluten-free symbols on top of each recipe. Jump to the recipe: You can now jump straight to the recipe if you don’t want to read the entire post. Just click on “jump straight to recipe” button on the top of each post. An updated “about me” and “work with me“, don’t forget to check those out. A lot of things still need to done/fixed, so please be a little patient if something doesn’t work right away. We wanted the blog to have a cleaner look and make it more user friendly and that’s what we have tried to achieve with this new design. All that you see here, the new design, the new logo it’s all been done by one and only – my husband, Sarvesh. He has worked day and night (along with his super busy full time job!) to give this blog a new look. I hope you guys love it as much as I do! And now on to today’s recipe. Do you buy granola from stores? I used to, but that was some 2-3 years back. Once I made it at home, I never looked back. Actually I still buy a lot of stuff from stores because you know sometimes shortcuts are important and there’s no harm in taking them. However granola is too simple to make at home, so simple that it feels almost ridiculous to buy it from the grocery stores now. If you don’t believe me than you have to try making it at home once.

Homemade granola is easily customizable. You add to it whatever you like and you can also change flavors according to season. For example, it’s all sunny and bright these days and tropical fruits are in season and so I made this Tropical Granola. This granola has coconut, mangoes, pineapple and mandarins and is really bursting with flavors. I can’t tell you guys how good it was with that blueberry yogurt. Actually that’s what I ate for lunch yesterday. Have you ever done that? Granola for lunch? I guess it’s reasonably okay to eat granola for lunch or dinner if it’s as delicious as this tropical granola!

You can alter this recipe as per your liking. For example you may add other tropical fruits like papaya and banana too. I think banana chips would be great here. You can also use other nuts like macadamia nuts  or cashews here. To make it vegan, use maple syrup in place of honey. Make this batch of   Method Pre heat oven to 350 F degrees. Place the unsweetened coconut flakes in a baking pan. Toast at 350 degrees for 7-8 minutes stirring in between till the coconut flakes are toasted and browned.Set aside. To a bowl add rolled oats, salt, ground ginger and chopped pecans. Set aside. To a small pan, add honey, coconut oil and almond extract. Heat it a little till everything combines well together.

Pour the wet ingredients into the dry. Mix till the oats are well moistened with the honey and coconut oil. Transfer the mixture into a baking sheet lined with parchment paper. Spread the mixture as a single layer. Bake at 325 F degrees for 30-35 minutes, stirring after every 10 minutes. Remove granola from oven and let it cool down a bit. Once it has cooled down, add toasted coconut and dried tropical fruits.  Store your homemade tropical granola in airtight container and enjoy with milk, yogurt or as  snack!
