Cook and cut: Place the sweet potato in the center of the microwave. For a medium-sized one, microwave for about 2.5 minutes, carefully flip it over, and microwave for about 2.5 more minutes. Using oven mitts or a towel, take the potato out of the microwave and place it on a plate. Cut it lengthwise in the middle, fluff it with a fork, season with salt and pepper, and top with a knob of butter!
