Apr 01, 2015, Updated Jan 02, 2018 Spring is finally here with Easter less than a week away. While I always want to share dessert recipes for holidays this time I am making an exception. Today I am sharing with you a super simple recipe, which traditionally doesn’t belong on the Easter table but I see no reason why it shouldn’t?! It’s fresh, delicious and perfect for spring. I think that qualifies my Strawberry Lassi for the Easter brunch. Isn’t it? Lassi refers to any yogurt based drink in India and it’s quite popular in US as well. The most popular lassi in this part of the world is Mango Lassi, I swear I have seen it in every damn Indian restaurant I have visited in this country. But in India the most popular lassi is actually sweet lassi and salty lassi , these are without any fruity flavors, the salty one does have some spices added to it. With temperature in 100s during May-June, lassi is quite a popular drink back home. It’s refreshing and also good for you!
It’s so funny that I started enjoying a lot of things after I started my food blog [which basically means after I started cooking] and lassi is one of them. Mom used to make sweet lassi for dad often but I would never have even a sip of it. I just never wanted to drink lassi and look at me now, posting a recipe of the same thing on my blog! One another such thing is rajma, never liked it before, love it now when I make it! Anyway back to my strawberry lassi. I made this for 2 reasons 1) I got a huge box of strawberries from Costco and as usual I had to use it in some recipe. I rarely buy fruits and veggies from Costco just because we can never finish with them but this time around a friend was visiting us so I got the big box and even then it was not over! 2) It’s spring so strawberry recipes just make more sense! 😀
Now I have to say that the strawberry lassi was delicious. I drank half of it while trying to click the pictures. To make this lassi is simple, puree the strawberries with sugar and then add yogurt and milk to it. For a creamier lassi, you can even add some half & half to it. I also added cardamom powder and little rose water to this but that’s optional. I would actually recommend both though, because I love the flavors they imparted to the lassi. Oh and yes lassi is supposed to be quite thick, mine isn’t that thick simply because I prefer it this way. If you want thicker lassi, just increase the amount of yogurt to 1 cup and it should be fine! Enjoy!
