If you’re looking for a refreshing summer drink, a way to use up an abundance of strawberries - Learn how to make this homemade strawberry juice, which requires only three ingredients: fresh strawberries, lime/lemon juice, and a sweetener plus water. Simply blend everything and then enjoy immediately, or strain the juice first.   Strawberries are in season for most of the year, from Jan-June. This is a perfect recipe for strawberry picking season, as the berries are super sweet and flavorful.

Strawberry Juice Benefits

Strawberries are an excellent good source of many vitamins and minerals like vitamin C, manganese, folate, and potassium. They also contain a lot of dietary fiber, which is good for gut health. They’re loaded with antioxidants and other plant compounds, including Anthocyanins, which help reduce the risk of heart disease, diabetes, cancer, etc. This juice is preservative-free, low in calories, sodium-free, fat-free, and cholesterol-free.

Ingredients

You only need three main ingredients to make this fresh strawberry juice recipe.

Strawberries: Use fresh, ripe, in-season strawberries for the best flavorful juice. I highly recommend using organic strawberries whenever possible to avoid pesticides. You can also use frozen ones. Lime juice (or lemon juice): A slight tang from the lime (or lemon) juice will elevate the sweetness of the fruit. Sweetener (Optional): If strawberries are not sweet enough, then you can add your choice of sweetener, e.g., sugar, maple syrup, honey, agave, etc. You may also use keto sweeteners like erythritol and stevia. Water: A small quantity of water is added to get the juice consistency. Otherwise, the juice may turn thick. Ice - optional for serving.

How to Make Fresh Strawberry Juice

First, wash the strawberries, remove the green stems and roughly chop them. Note: The greens are edible and contain nutrients, so you can save them.

Using a Blender/Immersion Blender

Transfer the strawberries, water, lime juice, and sweetener to a high-speed blender like Vitamix or use an immersion blender. Blend until smooth. Pour the juice into the serving glass with ice cubes and enjoy immediately or allow it to chill in the refrigerator for 1-2 hours. Note: If you don’t like pulp in your juice, strain it through a fine-mesh strainer or a nut milk bag.

Using a Juicer

Put the strawberry pieces into your juicer chute one at a time. Collect the juice, squeeze some lime juice and add the sweetener of your choice. Dilute it with some water if desired, and enjoy!

Storage Instructions

Refrigerator: Consume this fresh strawberry fruit juice immediately to get the most nutritional benefits. However, leftover juice can be stored for two days in an airtight container in the fridge. Give a quick stir before serving. Freezer: For the best flavor, you can freeze the juice in a freezer-safe ziplock, ice cube tray, or popsicle mold for up to 2 months. You can use them for slushies and smoothies or simply defrost and enjoy them as juice.

Enjoy pulpy or smooth: My Vitamix blender makes perfectly smooth juice, but if you want thinner juice with no pulp, strain the juice through a fine mesh strainer, cheesecloth, or a nut milk bag. Adjust the sweetness: Adjust the amount of sweetener depending on the sweetness of your strawberries. 

Optional Add-ins

Citrus: Adding orange or lemon/lime juice will balance the sweetness and brighten up the flavors. Herbs: Fresh herbs, including mint, basil, rosemary, etc., pair well. Ginger: Use a small piece of fresh ginger root for a spicy, acidic zing and health benefits. Other fruits: There are plenty of fruits that will pair well with this juice. Raspberry, apple, orange, peach, pineapple, watermelon, mango, etc. Liquids: you can dilute the juice further with coconut water, or make it fizzy by adding sparkling water. Spices: Add a pinch of ground cinnamon or Indian chaat masala for a subtle flavor. Salt: Add a pinch of salt to enhance the berry flavor.

Variations

Strawberry Orange Juice – thin with orange juice. Strawberry Watermelon Juice – add 1 cup of watermelon chunks with the strawberries to puree, and skip adding water. Strawberry Peach Juice – add peach slices with strawberries while pureeing. Strawberry Mango Juice – thin with mango juice or add mango pulp while pureeing the strawberries. Strawberry Kiwi Juice – add 1 kiwi with the strawberries to puree. Strawberry Banana Juice – add 1 medium banana with the strawberries. Strawberry Apple Juice – thin with apple juice or add apple chunks with strawberries to puree.
