I have realized that people assume that as food bloggers we are making fancy and lavish dinners at home everyday. Umm No. I mean of course I love to cook and I also cook everyday but those fancy dinners are usually reserved for the weekend. Don’t we all want something quick and easy for the weekdays? Something which could be made with minimal prep work and still taste delicious? Yes we all want that! Growing up, the usual dinner that I ate was always Indian, no not the naan and curry that’s exclusive to restaurants. What we ate was simple roti (whole wheat flatbread) , lentils and veggies. This is what I ate 95% of the time for dinner. But making a proper Indian dinner takes time and I do not have the time to do it every day. It is on those days that I make quesadillas, it’s my favorite quick meal. They are so easy to throw together with so many filling options. And with the weather warming up, I made these spring time black bean quesadillas. Topped with sweet potato fries and crispy onion rings, I served these quesadillas with a sweet and spicy mayo sriracha dipping sauce.

Anyway back to my quesadillas and how do I make them extra delicious! Being a vegetarian, I am always on the lookout for interesting and different filling options for my quesadillas, something which could be made quickly and also tastes good. Speaking of which, during my recent trip to Walmart I grabbed few packets of Alexia Spicy Sweet Potato Fries, Crispy Onion Rings & Sweet Potato Fries with Sea Salt. I thought it would be fun to not only serve the fries along with the quesadillas but also to fill them with these crispy onion rings and fries! Have you guys tried this? Stuffing your quesadillas with french fries and onion rings? Well you definitely need to because the crispy onion rings added in that desired crispiness to the quesadillas and the spicy sweet potato fries made them even more flavorful [and more spicy too and I obviously love me some spice!] The Alexia Fries and Onion rings are ready in less than 20 minutes and what I love about them is that they are all made from finest natural ingredients. Alexia has a wide variety of products and some of them are also Non-GMO certified. Make sure to check out their website to know more. I know I will be getting more Alexia products to whip up easy meals like this. I love easy recipes, don’t you?

This recipe for these springtime black bean quesadillas is super simple and there’s hardly any cooking involved. First bake your Spicy Sweet Potato Fries and Crispy Onion Rings (I love how crispy they were!) according to instructions on the package. Then mix in all ingredients together, cover the tortilla with the filling and top with fries, onion rings and cheese. Super simple right! Oh and don’t forget to serve some Sweet Potato Fries along with mayo sriracha dipping sauce for that extra flavor!

  Method Gather all your ingredients. I used a 3 cheese blend for these quesadillas, you can use any cheese of your choice. I got the broccoli slaw from my local Walmart store, in case you don’t have it simply use 1/2 cup of shredded carrot, red cabbage and broccoli.

Start by making the chipotle chili spread. In a bowl mix together sour cream, mayonnaise and chipotle chili in adobo sauce (only the sauce). Add the dried dill. Mix till well combined. Keep it in the refrigerator until ready to use.

To make the filling rinse the beans and place them in a bowl. To the bowl add chopped bell peppers, scallions, broccoli slaw mix, salt, garlic salt, tomato ketchup, cumin powder, red chili powder and cajun spice mix [optional] Add chopped cilantro, lime juice and mix. Using the back of your spoon mash the beans, it’s okay to not mash all of them. Mashed beans are easier to fill in the quesadillas.

Take a tortilla and apply on it around 1-1.5 tablespoons of chipotle chili sauce that we prepared earlier. Now cover the tortilla with 5-6 tablespoons of the filling. Do not overfill it else the filling will start coming out. Sprinkle around 2-3 tablespoons of your favorite cheese on top. Place Alexia Spicy Sweet Potato Fries and Crispy Onion Rings on top. You can add more of them, I just don’t like over-stuffing my quesadillas. Top it with 1 more tablespoon of cheese, it helps to hold the tortillas together. Repeat with remaining tortillas.

Place a handful of spring greens [optional] and cover with another tortilla smeared with the chipotle chili sauce with the sauce side facing down. Heat a teaspoon of oil in a pan on medium heat. Place the tortilla on it  and let it cook for few minutes. Then pour some oil on the side facing you and flip the tortillas carefully. Cook till it’s nice and crisp from both sides. Quesadillas are done when tortillas is golden brown and crisp. Cut the tortilla into 4 quarters using a sharp knife or pizza cutter.

And now make a quick mayonnaise sriracha dipping sauce before you serve these! In a bowl mix together mayonnaise and honey. Add in the sriracha hot sauce and some garlic salt. Mix till everything is well combined. You can add more hot sauce if you like spicy food!

Top with avocado and enjoy the quesadillas with a side of Alexia Sweet Potato Fries and mayo sriracha dipping sauce! What is your favorite quick meal? Let me know in the comments section below!

  • Use a good amount of cheese in the quesadillas, it is important to hold the tortillas together. In case you think the tortillas are not sticking together, add more cheese.
  • Be very careful while flipping the tortillas. Flip them carefully so that the filling doesn’t come out.
  • Feel free to change the veggies according to what you have in the refrigerator. It’s not mandatory to use all of them!
