Oct 24, 2013, Updated Apr 13, 2019 As a child, whenever I told mom that I wanted to eat something sweet, she almost always gave me two options – sooji halwa and aata halwa. I’m sure this is a common things in many Indian household, just because these halwas take very little time to cook and are yet delicious to eat. Sooji halwa is like a pudding and is made using 4 basic ingredients: semolina (which is called sooji in hindi), clarified butter (ghee), sugar and water. Rest of the ingredients like cardamom, saffron, nuts etc. are optional. So the other day while making sooji halwa at home, I thought of giving it a twist and since I’m so fond of chocolates it was the first thing that came to my mind.
And so I added some cocoa powder in the sooji after roasting it. The chocolate added quite a good flavor to the halwa and you will enjoy it all the more if you are chocoholic like me! I am sure the kids will love this variation of sooji halwa.
Method
In a pan, put water to boil. Once it comes to a boil switch off the flame. This should be done just before you start making the halwa so that the water is ready by the time you need it.
Put a wok or kadhai on medium heat, add the ghee and let it melt. The amount of ghee that you use in halwa can be adjusted according to taste and preference.
Once the ghee melts, add the cardamom powder and give it a mix. Also add in saffron strands at this stage if using in the recipe.
Add the sooji (semolina) and roast it along with the ghee. Roast till the sooji changes its color and you can smell a nice aroma. This step takes around 7-8 minutes. Keep stirring the sooji frequently because it burns quickly.
Once it’s roasted, add cocoa powder and give it a good mix. You can add more or less of the cocoa powder depending on how strong you want the chocolate flavor to be in the halwa. If you want more chocolaty flavor, add more of it.
Now add in the water, stir for a minute and slow down the flame to low-medium.
Add in the sugar and keep stirring the halwa till the sugar dissolves completely.
Once the sugar dissolves, cover the pan and let the halwa simmer for 2 minutes or so.
Take out the halwa in a serving bowl and garnish with sliced almonds and chocolate chips. Enjoy the sooji chocolate halwa !
