I cook and bake so much for the blog and you may assume that I eat a fancy breakfast everyday, but the truth is that on most days my breakfast is simply some yogurt with granola. I want something quick in the morning and that’s why yogurt and granola often comes to my rescue. It’s not that I don’t cook a nice breakfast, I do, but that’s mostly for weekends. On weekdays, I have so much work to do plus hubby has to leave for work and it’s a total mess. So to avoid the morning chaos in the kitchen, I just bake a batch of granola one day and then we are set for the week. While I have shared a lot of granola recipes on the blog before, I am really excited to share this Quinoa Honey Nut Granola recipe with you guys because this is absolutely the best granola I have ever made at home. It’s so flavorful, crunchy and tastes amazing. I love giving homemade granola to friends and family and since it’s the Holiday season, I thought this would be the perfect time to share this recipe. You can make a big batch of this, pack into little treat bags and gift to your loved ones. I am sure they will delighted to have some homemade granola.

This quinoa honey nut granola has basically very few ingredients. There’s rolled oats, quinoa and some mix-ins. You can add whatever mix-ins you like, here’s what I added into my granola. ✓ pumpkin seeds: they add such a nice crunch. You can use sunflower seeds too but I prefer pumpkin seeds. ✓ nuts: pecans, walnuts, cashews – you can use whatever you want. I used a combination of walnut and cashews. I highly recommend adding cashews, they tasted amazing in this crunchy granola! ✓ dried cranberries: they add a little tart taste. Optional but recommended.

If you are anything like me, then you want your granola to have these nice big clusters. For that, you just need to not stir the granola while it bakes. If you keep stirring it all the time, then you won’t get these nice clusters. It will still very nice but minus the granola chunks. Feel free to add whatever you like here – chocolate chips, pistachios, dried fruits like apricots, coconut etc. I hope you guys enjoy this homemade granola! Looking for more homemade granola recipes?   • Pre-heat oven to 325 F degrees. Prepare a baking sheet with parchment paper.   In a pan whisk together honey and coconut oil. Put the pan on medium heat, till the mixture warms a bit and combines together. In a bowl toss together oats, quinoa, sea salt , nuts, pumpkin seeds and cinnamon powder. Pour the honey mixture over the oats-quinoa mixture. Mix till all mixture is moistened. Spread on a baking sheet evenly. Bake at 325 F degrees for 35 minutes. You can stir once in between, I did not.

Remove from oven. Let cool completely, break into clusters and stir in the cranberries (if using). Store the quinoa honey nut granola in an airtight container.

  • Wait for granola to cool completely before breaking it into clusters. The granola crisps up as it cools.
