I have made quick potato filling or masala with boiled and mashed potato, chopped onions, and a few dry spices in this recipe. But you can also skip onions in this recipe. I usually boil potato in Instant Pot or Indian Stovetop pressure cooker and store it for 2-3 days. I make Sabudana Vada, Beetroot Cutlets, Aloo tikki, or Rice Cutlets with cooked potatoes. You can make this potato sandwich recipe using white bread or wheat bread, or multigrain bread. I have used white bread in this recipe. When serving toddlers and kids, you can use butter to toast the sandwich. Otherwise, you can use oil or even dry roast the filled sandwich. I have toasted this sandwich on a hot tava, but you can use a sandwich maker or grill to toast the sandwich.
How to Make Spicy Potato Sandwich
Add potato, onion, coriander leaves, garam masala, red chili powder, chat masala, salt, and mix this well in a bowl. Take a bread slice and spread the green chutney on this spread and the grated cheese. Take another bread slice and spread the potato mixture. Now cover this potato bread with another slice of bread, to which both chutney and cheese have been applied. Put this on a Tawa or grill the sandwich till browned from both sides. Which cheese can I use for Potato (Aloo) Sandwich?
I have used freshly grated mozzarella for this sandwich. You can also use cheese slices, processed cheese cubes, mild cheddar, or even cottage cheese (Paneer). But if you don’t want to add cheese, you can totally skip it.
Tips & Variations
Use brown or multigrain bread for healthier choices. You can also top it with vegetables of your choice, like tomato slices, and capsicum. Toast the bread on tawa or use a sandwich maker or grill to roast it golden and crisp. You can also use shredded mozzarella or paneer. You can skip onions and add shredded carrots to this filling. If you are vegan, skip mozzarella or use vegan cheese and replace butter with oil. You can increase or decrease spices according to your choice. You can use the same potato mixture and make aloo paratha, aloo tikki.
