The paneer stuffing mixture is cooked here and is called bhurji, which is prepared similarly to egg bhurji. Since my husband doesn’t eat eggs when I crave egg bhurji, I usually make this paneer bhurji for dinner. The leftovers I use for preparing a sandwich for the next day’s breakfast or my kid’s lunchbox. Use multi-grain or whole-wheat bread for healthier choices. There is another version of the paneer sandwich where the stuffing is uncooked i.e., grated paneer is mixed with onion, chilies, and a few spice powders and stuffed between bread. The Paneer Bhurji sandwich is an easy, delicious kid’s favorite sandwich. It is a good start. Here, I have used the tawa to toast the sandwich, but you can use a sandwich maker or grill to toast. Another noteworthy tip, if your paneer bhurji is very dry, add 2 tablespoons of milk while preparing the bhurji to make it moist and soft.
How to Make Paneer Bhurji Sandwich
To make Paneer Bhurji:
In a Kadai, add oil, once oil is heated, add cumin seeds, let them splutter, then add onions, ginger, garlic, green chili, and turmeric and saute well till onions are lightly browned. Then add jeera powder, garam masala, red chili powder, and saute for a few secs. Now add tomato and cook until they turn soft. Then add crumbled paneer, salt and cook for 1-2 minutes. At this point you can also add 2 tablespoon of milk makes paneer bhurji soft and moist. Finally, add lime juice and garnish with coriander leaves and switch off the flame. Paneer bhurji is ready.
For Paneer Bhurji Sandwich:
Take bread slices, and spread paneer bhurji mixture on the bread slice. Add some mozzarella cheese on top and close another slice of bread on top. Heat the tawa on medium flame, add some butter to the tawa, and place a paneer sandwich on it. Apply some butter on top of the bread and toast till the sandwich becomes golden brown in color on both sides. Once the sandwich is toasted well, Serve Cheese Paneer bhurji Sandwich hot with ketchup.
Serving Suggestions
Serve Paneer Bhurji Sandwich with tomato ketchup or green chutney on the side. You can also serve it with a milkshake or juice for toddlers and kids and serve it with coffee or tea for adults.
Tips & Variations
Use brown or multigrain bread for a healthier choice. Paneer Bhurji is more soft, when homemade paneer is used. After adding paneer, you can also add 2 tablespoons of milk makes paneer bhurji soft and moist. Do not over-cook bhurji after paneer is added, else it will turn hard. Toast the bread on tawa or use a sandwich maker or grill to roast golden and crisp. If you are vegan, skip mozzarella or use vegan cheese and replace butter with oil. You can also add finely chopped bell peppers or corn to this bhurji.
