I always struggle to create quick and easy appetizers. Actually I don’t struggle but whenever I think of snack and appetizers, I think of Indian appetizers which I grew up eating and I have to say most of them are deep fried! We make all sorts of things like aloo tikki, samosa etc. and deep fry everything. So yes everything is delicious but not healthy and also needs some prep work. When I am running short of time and have friends/family coming over, bruschetta more often than not comes to my rescue! Isn’t it the easiest appetizer to make?
The other day we went to Seattle’s famous Pike Place Market. Now if you are a foodie, then you can never have enough of that place. Oh my god, there’s so much to look around, eat and buy! I absolutely love the French Pastry shop there, they have the most gorgeous desserts and breads and so we got a French Baguette from there. And then I also happened to pick a bottle of extremely delicious balsamic vinegar. And since I bought these 2 things, this Onion Tomato Bruschetta with Balsamic Glaze had to happen! There are 3 parts to this recipe:
- Make the onion-tomato-basil mix. For this just just need to mix in everything together. It’s good to mix everything and keep it aside for 1-2 hours. This way the flavors really come together.
- Toast the bread. You can do this using an oven (like I did) or use a toaster or a grill pan.
- Make the balsamic glaze. The important thing here is to not over-cook the balsamic vinegar and maple syrup mixture. 4-5 minutes are more than enough, this gets thick really fast. If you keep cooking it, the mixture will all clump together so you won’t be able to pour it over the bruschetta. Oh and yes, a good quality balsamic vinegar makes all the difference!
Method In a bowl mix together chopped onion, tomato and basil. Add olive oil, garlic salt, salt and black pepper to taste. Mix everything till well combined and then set aside for 1-2 hours. This time is important for flavors to mix-in together. In a plate take olive oil and add minced garlic to it. Also add salt, black pepper and mix. Dip the bread slices one by one in this oil-garlic mixture. Toast the bread in the oven at 350 F degrees for 8-10 minutes. Or you can toast on a grill/pan.
While you are toasting the bread, make the balsamic glaze. To a pan on medium heat, add balsamic vinegar and maple syrup. Also add pinch of salt & black pepper (optional). The mixture will come to a boil, keep stirring till it thickens. This will take 4-5 minutes, be careful not to cook it too much else it will thicken a lot and you won’t be able to pour it over. You will know it’s done when it coats the back of your spoon. Arrange the bread slices on serving plate. Top with the onion-tomato-basil mixture.
Drizzle the balsamic glaze on top and serve the onion tomato bruschetta immediately! Onion Tomato Bruschetta with Balsamic Glaze
