Indian cuisine is loaded with delicious rice recipes. However, there are many people who forbid consuming rice because of many health-related reasons. For instance, weight loss, sugar level, and more. As a result, people look for better alternatives. And what can be a better alternative than millet? Well yes! Millet is a better alternative to rice since it contains significantly more protein and fiber. Besides, it has several uses in the culinary world. You can prepare a wide variety of foods using millet, including millet salads, millet upma, millet pulao, millet khichdi, and even basic millet roti. Today, I am sharing a healthy foxtail millet fried rice recipe. This is a flavorful and nutritious take on classic vegetable fried rice, where wholesome foxtail millet instead of traditional rice. The best part you can also make it with leftover cooked millet. This millet rice is loaded with fiber, protein, healthy fats, and essential minerals, making it “the perfect recipe to include in your healthy diet”.
Ingredients
Millet: I used foxtail millet in this recipe. You can use any millet like little millet, kodo millet or barnyard millet. Note: I did not soak the millet before cooking in this recipe. Vegetables: I used veggies like carrots, beans, broccoli, and bell peppers, in this recipe, but feel free to add other veggies of your choice, like mushrooms and sweet corn. Paneer: I used small cubes of paneer in this recipe for extra protein. You can also use extra-firm tofu. Garlic & ginger: Use freshly minced garlic and ginger for the best flavor. You can also use homemade ginger and garlic paste. Spring Onions: I used both white and green parts of the spring onions. I like to use green onion to garnish the millet fried rice. You can also use scallions. Soy sauce: I used light soy sauce. If gluten-free, you can use tamari or coconut aminos. Oil: I used olive oil to cook the fried rice. Seasonings: Salt and freshly crushed black pepper.
How to Make Millet Fried Rice
How to Cook Millet:
On Stovetop Pot: Cook the ½ cup of rinsed millet with 1 cup of water on medium-low heat for 15-20 minutes or until cooked, and let it cool. Stovetop Pressure Cooker: Pressure cook the ½ cup of rinsed millet with 2 cups of water for two whistles on medium-low heat. Let the pressure release naturally. In Instant Pot (Electric Pressure Cooker): Pressure cook the ½ cup of rinsed millet with 1 cup of water on MANUAL/PRESSURE COOK mode for 10 minutes. Let the pressure release naturally. Stir Fry:
Heat 2 tablespoons of olive oil in a skillet or wok over medium-high heat. Add the minced ginger and garlic, and sauté for a few seconds or until fragrant. Then add white onions and green chili and cook for about 2 minutes till the onions turn soft. Add carrots, bell peppers, broccoli, green beans, and salt, then stir-fry on high flame until the vegetables are cooked and tender. Then add cubed paneer and saute for another minute. Add the cooked millet, soy sauce, salt, and ground black pepper. Gently toss the millet and stir-fry until heated through (about 2 minutes). Finally, garnish with spring onion greens and serve immediately.
Storing Suggestions
Millet fried rice can be stored in an airtight container for about 2-3 days in the refrigerator. Then, reheat it in the microwave or wok until warm before serving it again.
