How to make peanut butter bars
Make The Peanut Butter Layer: Add the oats to a food processor and blend until you get a flour-like consistency. Then, add the peanut butter, honey, salt, vanilla extract, and coconut oil and blitz until well combined. Transfer the peanut butter mixture to a lined baking tray or silicone mold, using a spatula to spread until it’s an even layer in the pan. Place in the refrigerator/freezer to set a little. Make The Chocolate Layer: Using the double boiler method, add the chocolate chips to a bowl over a pot of simmering water and melt. You can also microwave them in a microwave-safe bowl in 15-20-second bursts until melted. Stir well. Pour the melted chocolate on top of the peanut butter layer, then return to the fridge/freezer to set. Once the peanut butter chocolate bars have set, lift them from the tin (having parchment paper larger than the tin will help) and slice them into squares or bars.
