I can’t get enough of peaches right now. Every weekend I get this huge box from Costco or the farmer’s market, they are so delicious that it’s hard to resist. But the problem is that the peaches in the box are way too many for the 2 of us to consume. So last week I baked with them and this weekend we grilled them and made this really delicious dessert. Grilled peaches with mascarpone and honey might be a simple summer dessert, but it looks so fancy. Don’t you guys agree? I was very excited to grill these peaches. Actually I am always super excited to use the grill simply because it’s new for me. And honestly grilling makes the food so delicious. This weekend, we used our grill on both days. Roasted corn, sweet potatoes, burgers and of course these grilled peaches were on the menu. It was a delicious menu and one we thoroughly enjoyed. Summer always feels so short so I feel like making the most of it. I can’t believe we are already half way through July, more than half way actually. Where is the time going? I seriously don’t know!
Grilled peaches are pretty fantastic on their own but obviously when you add honey and mascarpone, they become all the more delicious! Another great topping on grilled peaches would be vanilla ice cream. Honestly speaking, my husband didn’t like this dessert because he doesn’t like mascarpone cheese so he had his peaches with ice cream but if you are like me and love mascarpone, then you must give this a try. I for one loved it! And don’t forget to wait a little before you put the mascarpone on top, I put mine when the peaches were still pretty hot and as a result it all melted. I didn’t really mind it but if you do, wait for peaches to cool down once they are grilled and then top with the cheese. Method In a bowl whisk together mascarpone cheese, honey and heavy cream till well combined. Set aside. Heat butter in a pan of medium heat. Once the butter melts, stir in the honey and vanilla extract and mix till everything is well combined. Brush the mixture on all the peaches. The peaches should have been cut in half and pitted before you do this.
Place the peaches on the grill with the buttered side facing down. Also make sure to spray the grill with a non-stick spray else the fruit would stick to it. Yeah lesson learnt, I forgot to do it! Grill for 4-5 minutes or till the peaches get nice grill marks on them. Remove the peaches from the grill and now brush with the butter mixture on the other side. Place the peaches back on the grill again, the buttered side being down again. Grill again for 5-6 minutes or till they become nice and soft. Remove the peaches from grill, top with prepared mascarpone cheese, sprinkle some cinnamon powder on top, garnish with mint leaves and serve.
