With only last few weeks of summer remaining I am trying to make most of it and what better to do than make ice creams! I came across Fig (anjeer in Hindi) ice cream during my stay in India this time. I loved the flavor and thought of recreating it when I return back. Few days back I spotted this big pack of Calimyrna figs at the store and I instantly knew what I was going to do with them.
When I made this ice cream I had some homemade honey roasted almonds in my kitchen and I thought of using them in this ice cream. In case you still haven’t checked out the recipe for honey roasted almonds, please do it now. They are one of the easiest snacks to make! The crunchy almonds paired beautifully with the fig flavor and made me really happy. A delicious ice cream = happy me! Because the dried figs were quite hard I had to first cook them in water till they were soft. Once soft I pureed them and added to the ice cream base. You can skip this step if using fresh figs, in that case you can puree them right away.
- I used dried figs for this recipe. I assume the fresh one would taste even better in the ice cream. If you can get hold of fresh figs, please use them in the recipe.
- Adjust sugar to taste. Remember the honey roasted almonds and figs are also sweet so do not go overboard with sugar. 1/2 cup was just fine for me, you can cut down on it as per your taste.
- If you have some fig puree left, blend it with milk and treat yourself to a delicious fig milkshake – tastes so good!
