Falafel is an incredibly versatile ingredient—and this time, I have transformed it into delicious falafel burgers. These vegan high-protein patties have a crispy outside and tender, fluffy texture inside. They’re completely customizable, so you can make your perfect burger.

Make The Patties: Roughly chop the parsley, cilantro, garlic, and onion. Add the chickpeas, parsley, cilantro, garlic, and onion to a food processor and blitz until they reach a crumb consistency. Add the salt and falafel spice and blitz until incorporated.
Chickpeas: Use dry, pre-soaked chickpeas that aren’t cooked. Avoid using canned chickpeas. Fresh Herbs: I use parsley and cilantro. Onion Garlic Salt Falafel Spices: Combine coriander powder, cumin powder, black pepper, red chili powder, and optionally cinnamon.
For The Burgers:
Burger buns: Use your favorite kind – gluten-free, sesame, brioche, etc. Tahini lemon sauce: Make your own or use store-bought. Toppings: Tomatoes, lettuce, pickled turnips, pickles, red onion. You can also use your favorite toppings.
Use your hands to form the chickpea mix into balls. Flatten them into patty shapes—I made about eight large ones with this recipe. Dust them with chickpea flour if they’re a bit sticky. Cook The Patties: Heat some neutral cooking oil in a pan over medium-high. Then cook the falafel burger patties for 3-4 minutes on each side until browned. Assemble The Burgers: Lightly toast the buns. This is an optional step, but it adds a delicious flavor. Slice up your veggies to your desired thickness, then spread the tahini sauce on the bottom of the buns and stack with the toppings and the falafel patties. Enjoy your delicious falafel burgers!
