May 04, 2021 Growing up in India, eggless desserts were pretty common. A lot of people back home do not eat eggs, and most of the time it has to do with religious beliefs rather than an egg allergy. So I remember for our birthdays, we would always order eggless cakes, like eggless chocolate cake because a lot of people including my grandmother won’t eat it if it had eggs in it. Eggless desserts are not that common in US, of course now vegan desserts are catching up but still it’s not as common as it was back home. When I moved to US, we would go to these brunch places and they would always have pancakes and French toast on the menu. I loved both but always ended up ordering pancakes because somehow the French toast here always tasted very “eggy” to me. I could just never go past that eggy smell and so I started making them at home without eggs. This eggless French toast recipe has been my go to for many years now. If you don’t eat eggs or you are allergic to eggs, then this is the recipe for you. It’s super simple and you can make the batter in literally 5 minutes!

Ingredients

Let’s talk about the ingredients here, it’s all pretty basic and there’s definitely no fancy ingredients required here.

Bread: I feel this is the most important ingredient in this recipe. You want a thick bread for this recipe, so that the bread soaks in the liquid and also holds it’s shape well when cooked. I used a rustic white bread which was from a local bakery. You can use brioche, challah (but those usually have egg), sourdough is another good option. Whatever option you choose, make sure it’s thick.Milk: Use whole milk for best results. Skim milk doesn’t well that work in this recipe.Cornstarch: to make the soaking mixture thick in absence of eggs, I use cornstarch. It thickens the milk mixture and thus it sticks to the bread better.Flavoring: the French toast batter/liquid is flavored with vanilla extract, cinnamon, nutmeg and cardamom. I also use some sugar to lightly sweeten it.

How to Make French Toast Without Eggs?

It’s pretty simple, we just make a thick liquid mixture with milk and cornstarch and add some flavoring to it with spices and vanilla. Here’s how to make sure you end up with the best eggless French toast! Use the right bread: this is extremely important, as I mentioned above. A regular white bread or brown bread will also work but they won’t have the same texture once cooked so do use a thick bread. A stale thick bread works best. Flavor with spices: I like using a quite a few spices to season the liquid- there’s cinnamon, nutmeg, cardamom and of course vanilla. These spices and vanilla help make the French toast really flavorful. Use good amount of butter to fry: while frying the toast on skillet, don’t be hesitant to use butter. In my experience, using around 1/2 to 1 tablespoon butter per slice (talking about the big thick slices here) yields great result. Cast iron skillet gives better French toast: again my personal experience, but I love my French toast when I cook them on a cast iron skillet rather than a regular non-stick skillet.

Step by Step Instructions

1- To a large bowl (make sure it’s large enough for the bread to fit it else use a shallow baking dish) add milk and then add cornstarch. 2- Also add sugar. You can add extra 1 tablespoon if you prefer sweeter French toast. 3- Followed by vanilla extract, cinnamon powder, nutmeg, cardamom powder and pinch of salt. 4- Mix until everything is combined. 5- Heat a cast iron skillet on medium heat. Add 1/2 to 1 tablespoon butter onto the skillet and let it melt. Now, take your bread and dip it into the liquid mixture. Make sure to stir the mixture before dipping the bread into it (do this each time before dipping the bread since cornstarch settles at the bottom). 6- Dip one side for few seconds and then flip and dip the other side as well until the bread is well coated. 7- Carefully place the soaked bread onto the skillet. Fry for 3 to 4 minutes on one side. 8- Then flip and fry the other side as well until both sides are golden brown in color. Repeat with all the remaining bread. Remember to wipe the skillet after frying each slice and add more butter every time.
Serve with berries, maple syrup and butter!

Serving Suggestions

The French toast is usually served with berries, butter and maple syrup. But there’s so much more that you can serve it with like-

How to Store

Cook the French toast and then let them cool completely. Once cooled, wrap in aluminum foil and store in the refrigerator for up to 3 days. You can also freeze them for up to 2 months.

Tips & Notes

Make sure to stir the mixture before dipping the bread and do this each time. The cornstarch settles at the bottom so it’s important to stir it.Wipe the skillet each time after cooking a slice. Make sure the pan isn’t too hot, else the butter burns quickly, keep the heat on medium.To re-heat, pop them in toaster. You can also re-heat in the oven for 10 minutes at 350 F degrees.To make these fun for kids, consider cutting them in sticks before serving.If you prefer sweeter French toast, add an extra tablespoon of sugar to the milk mixture. Although I think this much is enough since we add sweet toppings while serving.
