After we make idli, dosa and uttapam with it, we are usually still left with a lot more and that’s when I use my waffle maker to make these Dosa Waffles or you can also call them Uttapam Waffles! I have been making these waffles for many years now and Sarvesh insisted I shared the recipe on the blog and so here it is. What is Dosa Waffle you might ask? It’s just basic dosa batter but cooked in a fun way using a waffle maker. I add some veggies to it to make it like a savory waffle which is filing enough for lunch, breakfast or dinner.

Why We Love This Recipe

Simply put this is a great way to use that leftover batter! Making dosa might need some skills but here it’s super simple. You just have to add the batter to the waffle maker and let it do it’s thing! This also makes a very filling and healthy breakfast or lunch. You can add as many veggies as you like to make it more nutritious. It’s also a great way to include veggies in your diet. It’s vegan and gluten-free which makes it perfect to serve to those with dietary requirements as well. So if you are hosting a tea party or a brunch and you have people with special diets then this can definitely be a part of your menu. These waffles take less than 30 minutes to prep and cook. Most of the work needed to make these waffles is in making the batter. Once you have the batter ready, these take like 10 minutes to prep and another 15 to cook.

Ingredients

Once you have the batter ready, you need only few ingredients here!

Dosa-Idli batter: the all in one batter that I make for making idlis and dosa (made with rice and lentils) is what we need to make these waffles. You might need to add some water to thin it out a little but make sure to have the batter ready to go before making these waffles. Veggies: I have used chopped onion and carrots here but you can also add tomatoes, green pepper, spinach etc. Seasoning & Herbs: to season I have only used salt and pepper, if you want you can definitely add spices like chili powder, chaat masala etc. I have used fresh cilantro here but you can also add mint or chopped curry leaves.

Step by Step Instructions

1- You must have prepared idli-dosa batter before you start with this recipe (please refer to the detailed post on the batter) . I typically use a day or two old batter to make these waffles. Transfer 2 cups of batter to a bowl. 2- Now add little water to thin it out, you would need around 1 to 2 tablespoons water here but it should depend on how thick or thin your batter is to begin with. I added 2 tablespoons water here and mixed well. 3- Add chopped onion, green chilies, cilantro, carrots, black pepper and salt (add only if your batter doesn’t have salt, mine did so I did not add salt here). 4- Using a spatula mix it all together until well combined. 5- Take your waffle maker and pre-heat it. Then spray it with a oil spray. 6- Then add the prepared batter into the waffle maker. I have this round waffle maker with 4 cavities. I added around 3/4 cup batter to the waffle maker. 7- And used a spatula to spread the batter a little so that all cavities are filled with batter. 8- Close the lid and cook the waffle according to instructions on your waffle maker. Mine cooks in around 5 minutes. Once done the waffles will be golden brown in color with crisp edges. Carefully remove the dosa waffles on a plate and enjoy for breakfast!

Serving Suggestions

These dosa waffles go well with chutneys of all kinds-

coconut chutney cilantro chutney tamarind chutney peanut chutney tomato chutney

Sarvesh also loves them with ketchup. You can also eat them with hot sauce if you like!

How To Store & Re-heat

You can make all the waffles, let them cool and then wrap these in aluminum foil and then store in the refrigerator. They should keep well for 3 days easily. To re-heat you can do either of the following-

in toaster- this is the easiest way, simply put the waffles in toasted and heat them up. in the air fryer- at 300 F degrees for 10 minutes. in the oven- 350 F degrees for 10 minutes.

Tips & Notes

You can use all kinds of veggies you like here- chopped spinach, tomato, green bell pepper, red pepper, green peas, corn, beetroot, cabbage can all be added here. If you love cheese, you can even added grated cheese to your batter. Sharp cheddar will go well here. If your kids love chocolate or nutella- then make these plain dosa waffles and drizzle them with nutella or chocolate sauce. These are great to pack in lunch-boxes or for road-trips. Easy to make, pack and eat!
