The fact that I’m a chocoholic is known to everyone who knows me. I mean I can live on chocolates forever and will probably not need anything else. Yes that is how much I love it, I think chocolate runs in my blood! No kidding! When I started baking I wanted to add chocolate in everything and I still do because there’s nothing quite like it in my opinion. I am always looking out for different varieties of chocolate candies to munch on or to bake with.
During my recent grocery trip, I spotted bright packets of M&M’s® Crispy in the candy aisle. I came to know that M&M’s® Crispy has been brought back due to popular demand. If that wasn’t enough to tempt me, the bright and colorful green packing certainly did. I grabbed the individual packages first because at only 180 calorie per serving I knew it would be the perfect snack to satisfy my never ending chocolate craving which could strike anytime and anywhere! I also picked up the larger bags so that I could bake with them [wasn’t that obvious!] As soon as I reached home, I popped a handful of M&M’s® Crispy into my mouth because I was so excited to try them! I couldn’t stop eating them because these delicious milk chocolate with a crispy rice center were too good to resist. It was also hard to not eat them all while I was baking with them. I decided to bake some oatmeal raspberry bars using the bigger packets. These bars are easy to put together and are a wonderful treat for just about anyone. I enjoyed these bars with a glass of milk while hubby ate them as such. According to him the raspberry jam and M&M’s® Crispy were so good together and I couldn’t agree more!
Here’s how you make these M&M’s® Crispy oatmeal raspberry bars in few simple steps. Method Line a 8×8 square pan with aluminium foil with overhanging edges. Spray the aluminium foil with non-stick spray so that it’s easy to peel off the bars once they have baked. Set aside. In a bowl whisk together quick oats, all purpose flour, baking powder and salt. Also add the brown sugar and 1/4 cup of M&M’s® Crispy. Mix everything together. Add in the softened unsalted butter. Use a fork or your fingers to mix in the butter completely till there are no chunks. Mix the butter till it’s well incorporated with the mixture and the mixture looks like coarse crumbs. Dump the mixture over the prepared baking pan, reserve 1/2 cup to add later on. Press it with your hands or using the back of your spoon till mixture is tightly packed. Top the oatmeal layer with seedless raspberry jam. I microwaved the jam a little to make it easier to spread. Now top the jam layer with the 1/2 cup of oatmeal mixture that we had set aside earlier. Press the remaining 1/2 cup of M&M’s® Crispy on the top most layer. Bake at 350 F degrees for around 30 minutes or till light golden brown from top. Let the bars cool completely [I know very hard!!] before cutting into pieces. Enjoy these crispy oatmeal raspberry bars with a glass of milk!
