We are more than half way through summer, honestly I don’t even know where the last 1.5 years went by. I was so busy shuttling between India and USA and taking care of mom that I never realized how days and weeks were passing by. This year from January till July, I was in both Delhi and Seattle each month, yeah can you guys believe it? I would stay 3 weeks with mom, then 2 weeks in Seattle and then again 3 weeks in Delhi. I did this for 7 months, it might feel like crazy amount of travel but I am so glad I was able to do it and spend those days with her. At least I don’t have the regret of not having enough time with her in the last few months due to distance. For me commuting between Seattle and Delhi became like commuting between say Delhi and Mumbai, after a point I didn’t even care about the long flights. I have become so used to going to India every few weeks, that now that I am in Seattle for last 2 weeks, I feel like it’s time to go back. Only if I still had the reason.

Anyway coming to summer and all that we love about it. When it gets hot, I love making popsicles and ice creams at home. This year, obviously I didn’t get the time to make anything but I wanted to share at least one frozen treat with you guys before we are done with summer. I made these Coconut Honey Basil Popsicles over the weekend and the flavors came together so well. Not only that, the popsicles also turned out super refreshing for hot days. The addition of basil and Nielsen-Massey’s Pure Lemon Extract made the flavors perfect for summer. Like most popsicle recipes, you only need like 5-10 minutes to make these. Basically you just need your 4 ingredients and a blender. Mix everything together in a blender, pour the mixture into popsicle mold and freeze. And just like that you have a nice summer treat ready in no time. I love using Nielsen-Massey’s Lemon Extract in my summer recipes as it’s full of bright flavor and complements just about any dish. It also pairs quite well with herbs like basil in this recipe.

A little point about using basil in the recipe. Basil has a pretty strong aroma as you all know so use it with caution. I would say added 3-4 basil leaves, blend and then taste test it. If the basil flavor still doesn’t come through, add more. It can get really strong if you add way too many leaves, so less is better here. We want a subtle basil flavor in these coconut honey basil popsicles, I added 4-5 basil leaves and that seemed just about right for me. You can obviously adjust to taste.
