  1. In a bowl, sift together coconut flour, all purpose flour, salt and baking soda. Set aside.
  2. In the steel bowl of your stand mixer fitted with paddle attachment or using hand mixer, cream together the butter and both the sugars.
  3. Add vanilla and egg and mix till well combined.
  4. Add in 1/2 cup flour, mix at slow speed until well combined and then add the remaining flour.
  5. Fold in the chocolate chips and mix the batter for 1-2 minutes till the dough looks ready.
  6. Since these cookies do not spread, take around 1.5 tbsp of dough and shape it round using your fingers.
  7. Bake in the oven at 350 F degrees for 11-12 minutes.
  8. Take them out of the oven but leave the cookies on the baking sheet for 2-3 minutes before putting them on wire rack to cool completely. * You can make these cookies using 50% coconut flour and 50% all purpose flour.
  • These cookies will not spread so shape them with your hands before putting them to bake.
  • Add 2 tbsp of oil and 1 extra egg if the dough looks very dry.
