Cookies are everywhere these days. On social media, in everyone’s kitchen and that obviously makes sense because it is the cookie season. People who don’t bake a lot of cookies otherwise, also do a lot of baking during this time of the year. Every year, my biggest problem is to narrow down which cookies to bake for the holidays. There are millions of cookie recipes online and it has happened so many times that I would think of a creative idea and then google it and then find it done already. And so it becomes more difficult because you want to be creative (since you are a food blogger!) and then you realize people have already done that. I did not bake a lot of cookies this year since I was really short on time due to my mom’s health and so I eventually decided to ditch all the creativity and bake a classic and that’s how I ended up with these Chewy Ginger Molasses Cookies. These are so good! These chewy ginger molasses cookies have such wonderful holiday flavors – cinnamon, ginger, cloves, molasses and you can taste these flavors in every bite that you take. I think I went a little overboard with the spices here especially ginger but I like my cookies this way. If you aren’t really a fan of these flavors, you might want to cut down on the quantity.
Have you guys ever worked with molasses? It’s made by boiling the sugarcane juice to a syrup and is a crucial ingredient in a lot of holiday recipes. I love the unique flavor that it imparts to holiday cakes and cookies and it also pairs perfectly well with all the spices like cinnamon, ginger, nutmeg etc. You might find 2 types of molasses in the market – light molasses and dark molasses. I have used the dark variety here because it has a stronger flavor which is required in these chewy ginger molasses cookies. It also gives the cookies their dark color! Molasses is pretty thick and sticky and it sticks to your measuring cup. Here’s a little tip – spray you measuring cup with a non-stick spray before you measure molasses for the recipe. This way molasses with come out of the measuring cup easily and none of it will stick back!
These Chewy Ginger Molasses Cookies pair really well with a glass of milk. But if you are like me and dislike milk (& I completely get that!) you can enjoy them with coffee as well. Hope you guys enjoy this classic recipe! Have a great weekend. Method In a bowl whisk together flour, baking soda, salt, cinnamon powder, ground ginger and ground cloves. Set aside. To your mixing bowl add room temperature butter with both the sugars. Cream butter with both sugars till well combined, scraping down the sides as required.
Add egg and molasses and mix to combine. Add the flour mix and mix using the paddle attachment of your stand mixer. The dough will come together on it’s down. If using a hand mixer, you might need to use your hands to bring it all together. Cover and keep the dough in the refrigerate for 20-30 minutes.
Take out the dough from the refrigerator and shape round balls – 15-16 balls of 2 oz each. Roll into turbinado sugar. Press the balls slightly and place on a baking sheet 2 inch apart. Bake at 350 F for 10 minutes. Remove from oven and, let them sit on the baking sheet for 5 minutes, then transfer to wire rack.
