Apr 01, 2014, Updated Jan 02, 2018 Summer is almost here, well not if you live on the east coast in USA but here in the west coast it’s getting pretty warm and back home in India it’s already quite hot. In fact I was talking to mom yesterday and she told me that my brothers have already started using the air conditioner, so you can imagine how hot it already is! Delhi gets terribly hot during summers and so while my elders happily sipped their chai in the evening I wanted to drink something chilled. And so mom would often make us mango shakes, cold coffee etc. This mocktail is a simple drink which is tasty and will also quench your thirst this summer. There’s a famous cafe in Seattle where we get amazing fresh juices and one of my absolute favorites is the carrot and ginger juice, so that’s where the idea for this mocktail came from. Carrot, oranges and ginger is a sure shot winning combination. Method Wash, peel the carrots and chop them into medium size pieces. Peel and cut the orange and ginger into pieces. Put everything together in a blender along with sugar, water and some ice cubes. Blend until smooth. Strain the mixture, press it with a spatula or spoon to extract the juice completely. Discard the solids.
Pour the mixture into glasses till 2/3 full, add soda/sparkling water to fill the remaining glass. Serve chilled.
- Cut down on ginger if you do not like it’s taste. I love the flavor of ginger with carrots and oranges , I have used up to an inch of ginger in this recipe. So adjust according to your love for ginger ; )
- Adding sugar to this mocktail is again up to you. If the carrots and oranges are really sweet maybe you don’t need to add any sweetener.
- The carrots and oranges that I used were pretty big in size, so in case you are using smaller carrots/oranges use more of them in the recipe.
