Feb 18, 2014, Updated Jun 17, 2024 The first time I tasted sweet potato fries was in US, in fact I had never heard about it back home in India. To my surprise, I loved them. They were delicious but of course the ones I had were fried and I can’t snack on them all the time. But the baked version of the fries can very well be your guilt free snack. The preparation time is hardly 10 minutes. Wash and chop the sweet potatoes , try and keep all the fries of equal shape and size. Now you can either toss them in a bowl or put them in a zip lock bag, sprinkle the cornstarch and shake shake shake! All the fries will be evenly coated with corn starch. Then add spices, oil and repeat the process. Using cornstarch is recommend because it helps in making the fries crispy. But I will be honest, these can never be as crispy as the fries that are fried in oil. But you can do few things to make them crispier:

  1. Add cornstarch to the fries.
  2. After the fries are baked, switch off the oven and let them sit in the oven for an hour. They get crispier with time if left in the oven. So here’s how you can make this healthy snack. Serves: 1 Ingredients Sweet Potato: 1 per person Cornstarch: 2 tsp per sweet potato Olive oil: 1/2 tbsp per potato, just enough to lightly coat the potatoes Spices: 1/2-1 tsp of anything you like – garlic, chaat masala, cayenne, cinnamon-sugar etc. Method Preheat oven to 400 F degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  3. Wash, peel and cut the sweet potato into thin slices. Try to keep all the slices of equal size and shape so that they take same amount of time to bake.
  4. Put the slices in a zip lock or in a bowl and add cornstarch. Toss so that potato slices are nicely covered with cornstarch.
  5. Add spices, oil and toss the potato slices again.
  6. Place the sweet potatoes on the baking tray. Leave little spaces in between as you line them on the baking tray.
  7. Bake for 20-25 minutes, flipping them once in between. Enjoy the fries with ketchup or as it is.
  • You can use any seasoning of your choice. If you want sweet fries, add cinnamon-sugar or vanilla-sugar. For savory fries, use paprika, cumin, garlic, chaat masala etc.
  • Always coat the fries with cornstarch first and then add in the oil. If you do the other way round, the potato slices would appear all white and will be sticky too.
  • Do not crowd the fries on the baking tray. One potato per baking sheet should be good enough.
