Yes I am going to stuff your face with all things pumpkin for a while, so please excuse me! I can’t help it, pumpkin is everywhere so whenever I think of baking something (which is everyday) I automatically pick up the pumpkin can. By the way what did you guys do for the weekend? It was my birthday weekend, so I had a wonderful time with family. Hubby also gifted me a new macro lens, which I can’t wait to shoot with! I have been meaning to share this recipe for a while, I think I made this  pumpkin donuts 2-3 weeks back but I was just not getting the time to edit the pictures but better later than never! I thought today is the perfect day to share this recipe after all a fresh new week should start on a sweet note, don’t you agree? 🙂  And what better than sharing one of my favorite fall treats – Baked Pumpkin Donuts with Chocolate Ganache.

I have told you guys my story about not being a fan of traditional donuts and fried things in general. I will definitely give the traditional donuts a try, I mean as someone who is so passionate about cooking I do want to make it but that can wait. Because right now I will settle with these baked donuts. These pumpkin donuts are soft, delicious and filled with all the warm spices that remind you of fall. And to take up these donuts to the next level, I dipped them in chocolate ganache. Because let’s face it, everything is better with chocolate!

I followed my recipe of baked vanilla donuts and made slight adjustments here and there to make these perfect for fall. What I like about baked donuts is that they come together so quickly. Of course they taste different than the traditional donuts, these are cake-like so in case you are fan of traditional donuts, give this recipe a skip. But if you are like me, then I insist you try these. The only flip side is that these pumpkin donuts are super hard to resist. Good thing I packed and sent the box with hubby to his office else I was going to finish the donuts all by myself!   Method In a bowl whisk together flour, baking powder, baking soda, salt and pumpkin pie spice. Add light brown sugar. Mix till sugar is well combined with the flour mixture. Set aside. In another bowl, whisk together pumpkin puree with canola oil.

Add in egg and vanilla extract and mix till combined. Finally add milk to the batter. Whisk to form a smooth batter.

Add dry ingredients to wet and mix till combined. Do not over-mix. Transfer batter to donut pan and fill the cavities till 3/4 full. Bake the donuts at 350 F degrees for 10-11 minutes or till a toothpick inserted in the center comes out clean. While donuts are baking, prepare the chocolate ganache. Take 4oz chocolate and chop it into small pieces (or use chocolate chips).Transfer chocolate to a bowl and set aside. Heat heavy cream in a pan till it just starts to simmer (it shouldn’t boil). Pour cream over the chocolate and let it sit for 5 minutes. After 5 minutes, whisk to form a smooth ganache. You can add little butter to give the ganache that shiny look.

Let the pumpkin donuts cool completely before dipping them in chocolate ganache!
