Apr 25, 2024 In my opinion, roasting vegetables in the oven is one of the best ways to enjoy them (like roasted broccoli and carrots!). It truly brings out all the flavors of these delicious vegetables. Ever since I discovered oven roasted veggies, I never went back until I discovered the air fryer. I still love roasting my vegetables in the oven but the air fryer makes it so quick and easy. And yes air fryer is a great little kitchen tool to have even if you are a vegetarian. I use it regularly to cook vegetables like potatoes & cauliflower to make my air fryer aloo gobi, onions to make onion pakoda and many more. Sweet potatoes are one of my favorite vegetables to eat and using the air fryer, I can prepare them in no time.
How to Reheat
My air fryer (I have the Gourmia brand air fryer) has a reheat button which reheats at 300 F for 15 minutes. So I just toss these back in the air fryer in a single layer and press the reheat button. You don’t have to reheat for 15 minutes, I just do around 7 to 8 minutes and they are as good as fresh! Now cut each round into 1/2 inch cubes. Repeat the same with other rounds and cut all the sweet potatoes into cubes. It is a good idea to keep them of similar size so that they cook at the same time. Preheat the air fryer according to the manufacturer’s instructions. Then arrange the sweet potato cubes in a single layer in your air fryer. If you have a smaller air fryer and all the cubes won’t fit in a single layer, then do this in 2 batches. But they have to be arranged in a single layer. Air fry at 400 F degrees for 10 minutes, shake the sweet potatoes once in between. Every air fryer is different so I would start checking around the 8 minute mark.
Serving Suggestions
You can eat them as much because they make a delicious snack. But here are some fun ways to add them to your meals.
Drizzle them with cilantro chutney, sweet tamarind chutney and make sweet potato chaat. Yum! Combine them with chickpeas to make sweet potato tacos. Add them to burrito bowl along with rice, beans and corn. Mash the roasted sweet potatoes and then mix them with oats and spices to make sweet potato tikkis.
You can also add them to salads with veggies or with quinoa and much more.
