If you have been looking for recipes using pantry staples during these times, then I have got you covered. These are vegetarian and vegan recipes which use ingredients like dry beans, rice, quinoa, pasta and canned stuff. As an Indian, my pantry if usually stocked with rice, all sorts of lentils and beans and of course spices. Quinoa and pasta are also some of the staples that I always have in my pantry. There are so many recipes which you can easily make by combining these ingredients with spices. Throw in some frozen veggies, canned beans and you have got yourself a meal. We are all trying to limit down our visits to grocery stores these days and that’s where these recipes come in handy. I have been making all sorts of lentils, beans, pasta for our lunches and dinner. Most of these recipes are also made in the Instant Pot, which makes them even easier. I hope this round-up helps you guys to plan some of your meals in the coming weeks! 1- Enchilada Rice This easy rice dish gets done in less than 30 minutes and is very filling. This recipe needs: rice, can of black beans, frozen corn, enchilada sauce & spices. Skip: cheese, cilantro. Can skip the onion and peppers.
2- Chana Masala Everyday Indian style chickpea curry made with dried chickpeas. This recipe needs: dried chickpeas and whole lot of spices. Skip: cilantro. Replace: fresh tomatoes with canned tomatoes, fresh ginger, garlic with store bought ginger-garlic paste.
3- Kung Pao Chickpeas Chickpeas cooked in an Asian inspired sauce, served with roasted peanuts. This recipe needs: dried chickpeas, sauces like soy sauce etc. for seasoning, peanuts. Skip: green onion, can skip peppers too. Replace: fresh ginger-garlic with ginger-garlic paste.
4- Mexican Quinoa A hearty meal made with quinoa and inspired my Mexican flavors. This recipe needs: quinoa, can of fire roasted tomatoes, can of black beans, frozen corn, spices. Skip: cilantro, avocado, jalapeño.
5- Three Bean Curry A simple curry made with three kinds of beans. This recipe needs: canned beans (kidney, black, white), canned tomatoes, spices, canned coconut milk. Skip: cilantro. Replace: fresh ginger-garlic with ginger-garlic paste, bottled lemon juice for fresh.
6- Idli Dosa Batter Make Indian style crepes (dosa) and steamed cakes (idli) with this homemade batter. This recipe needs: rice, lentils, salt.
7- Vegan Burrito Bowls An easy to make burrito bowl which is also vegan! This recipe needs: rice, can of beans, frozen corn, canned salsa, spices. Skip: cilantro, avocado, jalapeño. Can skip peppers.
8- Mediterranean Lentil Soup Tangy Mediterranean lentil soup is my go to soup for busy days. This recipe needs: red lentils, spices. Skip: parsley/cilantro. Can skip onion and use store bought minced garlic.
9- Brown Rice Chana Pulao A comforting meal made of brown rice and chickpeas, this pulao is a complete meal in itself. This recipe needs: brown rice, dry chickpeas, ginger-garlic paste, spices. Skip: cilantro, lemon juice.
10- Makhani Pasta This Indian inspired pasta comes together in minutes and is really packed with flavors! This recipe needs: penne pasta, can of diced tomatoes, tomato paste, spices, can of coconut milk. Skip: cilantro, jalapeño. Use store bought ginger-garlic paste in place of fresh ginger & garlic.
11- Rice & Dal India’s ultimate comfort food, filling, hearty and delicious! This recipe needs: basmati rice, lentils (split pigeon pea & split moong bean), spices. Skip: spinach, cilantro, green chili. Can skip onion. Replace: use canned tomatoes in place of fresh, store bought minced garlic in place of fresh garlic.
12- Thai Peanut Noodles One-pot noodles with peanut butter flavor, gets done in 30 minutes! This recipe needs: spaghetti, peanut butter, honey, sacues like soy sauce, hot sauce, peanuts. Skip: green onion, cilantro, peppers. Replace: frozen carrots for fresh or use other frozen veggies like corn, peas. Use bottled lime juice in place of fresh.
